“You do not like them. So you say. Try them! Try them! And you may. Try them and you may, I say.” Green Eggs and Ham by Dr. Seuss
We all know how hard it can sometimes be to get our kids to stray from macaroni and cheese or peanut butter sandwiches. If it even looks different or “weird” my 4-year-old will ask,”What’s in this?”, a wary look on her face.
I am not a restaurant. I recall my Dad laughing a few years back when I told my daughter who was 2 at the time that my kitchen isn’t a Sizzler. There’s no “all you can eat” buffet that you can return to as many times as you please, picking and choosing what you will or won’t eat. Meal time is now and this is what I am serving. Period.
There are so many great children’s books available that can teach our kids valuable life lessons. In honor of Dr. Seuss’ birthday tomorrow I decided to make “Healthier Green Eggs”, a recipe I created a couple years ago for my daughter’s birthday. It was the perfect entrée since her birthday happens to be on St. Patty’s Day. Not only is it the color of choice, but it’s also super healthy and yummy too. You may find that your kids may just be asking for more. They may even eat them in a box.
The Recipe
(serves my little family of 4 quite nicely)
You will need…
8 eggs
1 c. fresh spinach
½ c. milk
½ c. shredded mozzarella cheese
Instructions…
1. Crack the eggs and combine with other ingredients in a blender or food processor.
2. Blend one minute or until smooth.
3. Pour contents of blender into a large, greased frying pan.
4. Scramble as you would scramble eggs.
5. Serve with ham or other favorite breakfast foods.
It’s that simple! You can’t even taste the spinach. Pull out your old copy of Green Eggs and Ham (or click the link to purchase if you don’t already have one) and have a special story time at the table while you eat. Great for breakfast, lunch or dinner!

I love this — I admit, when I saw the title, I thought that you were going to say that soy fake eggs were healthier or some other concoction — but blending the spinach with (real!) eggs in is a brilliant idea 🙂 Thanks!!
